So, I was perusing Pinterest today. I haven't done that in a while! While I was clicking from pin to pin, I found this article:

As I was reading through the article, I found that many of these symptoms are things I've been dealing with for a while! So, I decided it was about time I start eating gluten free.
Adjusting to gluten free is difficult. I don't think eating gluten free will be hard in and of itself, but making the necessary changes is the hard part. I didn't realize how much gluten I was actually eating, but it's a lot!
So, I think I will start tracking changes in my symptoms. Maybe even weight, too? I have read various information about eating gluten free and how it doesn't always help with weight loss. So, I want to see what happens with me...

Hey Erin, I think gluten-free is a great idea. It helped me with lots of issues (stomach aches, constipation, anxiety, etc). When I first went gluten-free I lost a lot of weight, but that's just because it was awhile ago, before there was so much gluten-free stuff available. I was eating mostly meat and vegetables, lots of soups and salads. Now there are a ton of "gluten-free" replacement items (bread, pasta, cookies, etc) that I would be careful of, because they often contain just as much processed junk, chemicals, and sugar as the regular items. Also, I have realized that I need to be careful of my rice consumption, because rice causes blood sugar to spike up, which is like a burst of energy and then a crash. I feel so much better when I avoid rice and rice pasta (I used to live on rice-pasta as a gluten-free alternative, but now I just have it on a rare occasion). Well, anyway, I'm sure you've already been googling and finding out lots of info, but I thought I'd share my experiences! It's really not as hard as it seems, it can just be time consuming to make food fresh all the time. XOXO, Julie
ReplyDeleteI was actually eating gluten free a lot prior to this, but I wasn't being careful of all the little every day doses of gluten. I have been avoiding things that could even just be cross contaminated, and I am feeling SO much better!!
